Acorn Squash Tacos

Makes 4 Servings

Ingredients
2 Acorn Squashes
1 can of corn
1 can of black beans
1 can diced tomatoes and green chilies
1 cup of shredded cheese (cheddar or fiesta blend)
Optional: 1 pound of ground beef or shredded chicken, 1 packed of taco seasoning (mix with meat)

Directions

  1. Cut the acorn squash in half and scoop out the seeds. Use a fork to poke holes in the outside of the squash. Place in a microwave safe dish with a little bit of water covering the bottom of the dish. Cover with plastic wrap and microwave for 10-15 minutes (until the squash is soft).
  2. Preheat oven to 400 F. If you are choosing to add meat, cook the beef or chicken until done and add seasonings according to packet instructions.
  3. Mix together the corn, beans, diced tomatoes and green chilies, and shredded cheese. Stir in meat. This is the taco filling.
  4. Place squash halves inside-up on a baking sheet lined with foil. Spoon the taco filling into the squash. Sprinkle extra cheese on top
  5. Bake for 20 minutes and enjoy!
