Acorn Squash Tacos
Makes 4 Servings
Ingredients
2 Acorn Squashes
1 can of corn
1 can of black beans
1 can diced tomatoes and green chilies
1 cup of shredded cheese (cheddar or fiesta blend)
Optional: 1 pound of ground beef or shredded chicken, 1 packed of taco seasoning (mix with meat)
Directions
- Cut the acorn squash in half and scoop out the seeds. Use a fork to poke holes in the outside of the squash. Place in a microwave safe dish with a little bit of water covering the bottom of the dish. Cover with plastic wrap and microwave for 10-15 minutes (until the squash is soft).
- Preheat oven to 400 F. If you are choosing to add meat, cook the beef or chicken until done and add seasonings according to packet instructions.
- Mix together the corn, beans, diced tomatoes and green chilies, and shredded cheese. Stir in meat. This is the taco filling.
- Place squash halves inside-up on a baking sheet lined with foil. Spoon the taco filling into the squash. Sprinkle extra cheese on top
- Bake for 20 minutes and enjoy!
