Broccoli Cheese Stuffed Spaghetti Squash
Makes 4 ServingsIngredients
1 Spaghetti Squash
2 cups chopped broccoli florets
3 cloves minced garlic
1 tsp red pepper flakes
1 tsp Italian seasoning blend (or use oregano, basil, thyme, and parsley)
1/2 cup shredded mozzarella cheese
1/3 cup shredded parmesan cheese
Salt & Pepper
Directions
- Cut the spaghetti squash in half and scoop out the seeds. Use a fork to poke holes in the outside of the squash. Place in a microwave safe dish with a little bit of water covering the bottom of the dish. Cover with plastic wrap and microwave for about 10minutes (until the squash is soft). Set aside to cool
- Spray a skillet or large frying pan with nonstick cooking spray. Add red pepper flakes and cook for about 30 seconds, stirring continuously. Add broccoli and garlic. Add 2 tablespoons of water and sauté until broccoli is tender. Drain water and set mixture aside in a large bowl.
- Use a fork to scrape the inner flesh of the spaghetti squash into the large bowl with the mixture. Stir in parmesan cheese, Italian seasoning, and salt and pepper to taste.
- Distribute mixture into the empty squash halves. Sprinkle half of mozzarella cheese on top of each half.
- Place squash in an oven safe dish or pan and broil on medium/high heat for 2-3 minutes. Remove when cheese is bubbling and browned. Enjoy!Optional: add cooked chicken or shrimp to the spaghetti squash mixture
