Brown Sugar Delicata Squash

Makes 4 Servings

2 delicata squashes
2 tbs olive oil
2 tbs maple syrup
2 tbs brown sugar
¼ tsp ground cinnamon
Salt & pepper to taste


  1. Preheat oven to 400F.
  2. Cut the delicata squash in half lengthwise and scoop out the seeds. Cut the halves into 3/4″ thick slices.
  3. Combine the oil, maple syrup, brown sugar, cinnamon, and salt and pepper in a mixing bowl. Add the squash and toss until coated.
  4. Line a baking sheet with foil and spray with nonstick cooking spray.
  5. Spread the squash pieces in an even layer on the baking sheet. Bake for 20-30 minutes or until squash is tender and beginning to brown.
  6. Enjoy!
