Honey Roasted Butternut Squash

Makes 4 Servings

1 butternut squash
2 tbs olive oil
2 tbs honey
¼ tsp ground cinnamon
Salt and pepper to taste


  1. Preheat oven to 400F.
  2. Cut the butternut squash in half lengthwise and scoop out the seeds. Peel the squash (recommended to cut it into large pieces and cut the skin off) and cut into 1” pieces.
  3. Combine the oil, honey, cinnamon, and salt and pepper in a mixing bowl. Add the squash and toss until coated.
  4. Spread the squash pieces in an even layer on a foil-lined baking sheet. Bake for 20-25 minutes, tossing halfway through. Cooking time may be shorter or longer depending on size of squash pieces.
