Broccoli Cheese Stuffed Spaghetti Squash

Makes 4 Servings

Ingredients
1 Spaghetti Squash
2 cups chopped broccoli florets
3 cloves minced garlic
1 tsp red pepper flakes
1 tsp Italian seasoning blend (or use oregano, basil, thyme, and parsley)
1/2 cup shredded mozzarella cheese
1/3 cup shredded parmesan cheese
Salt & Pepper

Directions

  1. Cut the spaghetti squash in half and scoop out the seeds. Use a fork to poke holes in the outside of the squash. Place in a microwave safe dish with a little bit of water covering the bottom of the dish. Cover with plastic wrap and microwave for about 10minutes (until the squash is soft). Set aside to cool
  2. Spray a skillet or large frying pan with nonstick cooking spray. Add red pepper flakes and cook for about 30 seconds, stirring continuously. Add broccoli and garlic. Add 2 tablespoons of water and sauté until broccoli is tender. Drain water and set mixture aside in a large bowl.
  3. Use a fork to scrape the inner flesh of the spaghetti squash into the large bowl with the mixture. Stir in parmesan cheese, Italian seasoning, and salt and pepper to taste.
  4. Distribute mixture into the empty squash halves. Sprinkle half of mozzarella cheese on top of each half.
  5. Place squash in an oven safe dish or pan and broil on medium/high heat for 2-3 minutes. Remove when cheese is bubbling and browned. Enjoy!
    Optional: add cooked chicken or shrimp to the spaghetti squash mixture
